What, exactly, are you guys wanting to talk about that can't wait 5 minutes?

I know texting while driving is against the law in most places, but on the salt-- why not try it if whatever you have to say won't wait?

Not sure texting at 200+ mph is a good idea  :-D

I believe the motorcycle cops use ear mikes like the swat guys use, where both the earphone and the microphone are in the ear bud. That suppresses much of the outside noise especially if you are in a full face helmet.

After following a link on a motorcycle board I found this, which you guys might want to investigate.

The swat type systems are pretty pricy but I understand that bone conduction mikes need to do a lot of signal processing to get intelligible sound so not likely to show up in a cheaper rig.

I use and have tested this unit well over the posted speed limit. http://www.cardosystems.com/us/scala-rider/scala-rider-q2 Bluetooth through my cell phone to hear my wife on the other end Cristal clear.  After 30 minutes or so the first time I used it I asked, so do you hear any back ground noise? She said no I thought you were still in bed... I said No I was up and out the door early breaking in my new bike.  They have done a great job canceling out the road/engine noise even over a 130 mph with no fairings on my diavel the sound of music and or phone calls is great.  My cell provider is At&t so using cell service on the salt might not be the best possible choice..
