II wouldn't worry about it if I was going to run diesel or gas but with vegetable oil it needs to be hot. Like around 160 degrees plus for it to run most efficiently. And since I can't drive 5+ miles or so to get the vehicle and veggie oil warmed up, I'm trying to figure a way how to do this (a coolant heater that will pass inspection).

If you are able get the vehicle up to temp an hour or so before your run, you should be fine if you use a small insulated veg tank. In my climate we often do that for WVO... a small insulated (say, 2-3 gallon) tank can keep its temp for hours.

If you want to ensure you're getting 160*, use a 12V vegtherm just before the IP. That's what I do, and I'm driving to work in 5*F every morning. This past summer, my tank wasn't even heated and the vegtherm alone gave me a steady 150*
