Interesting question, Jason.  I went out in the rain to find my book (in the back of the truck still from our aborted trip to WF last week), and I don't see a P/P listing in 3000 cc.  In 2000cc P/P it's 180, in 1650 it's 172, and in1350 it's Rick Yacoucci's 1999 record of 203.392.

I don't see any production classes in the 3,000 cc class.  Maybe someone that's cloer to the El Mirage scene will have a better answer.

The reason there is no 3000 P/P is using the production rules one at this time could not exist. Overbore, etc:

I don't know whether the SCTA rules allows such production motor cycles as the Boss Hoss with passenger car based engines. Then I suppose one would. In the distant past they did not.

I'm a car guy what do I know!!!!

Doesn't Triumph make a 2,300 cc bike?

Ooops, Jason, did I let your cat out of the bag?

Looking in the 05' rulebook there is 3000cc production classes.  And the kicker.  No minimum!!  Must be the only classes at El Mirage with no minimums.
